Description
Ancient Hawaiians were the first to eat this delicate little fern known as Pahole fern. It was gathered in large ti leaves in higher elevation rain forests. Todays Hawaii chefs consider it to be a measure of how serious a restaurant is about using locally sourced vegetables. The Hawaiian Pahole fern defines todays island cuisine.
The most common use of Pahole fern is in a salad with a sweet sour dressing. Tomatoes and Maui onion are always added, plus sliced marinated octopus, lobster, or scallops, then garnished with watermelon radishes, carrots and sweet red pepper, then sprinkled with sesame seeds.
